Pontarlier-Anis Ponsec (Pastis)


We were at Cork-and-Bottle the other day and saw some pastis on the sale shelf.  The whiskey guy said that it was good one, so I thought I would give it a try.  I like pastis, it’s related to absinthe.  It is often drank the same way as absinthe, so I will review it like absinthe.

Its color is a pale, pale, peridot.  Almost clear like a blanche.  There is not much aroma until it is loched… and then it is subtle, slightly grassy with an overtone of anise.  The flavor is light licorice with a clean herbal note, only numbing the tongue a little.  It is naturally sweet and does not need any added sugar.  It is only 88 proof, which is much less than absinthe.  This is a delightful, delicate, refreshing pastis.
